Thinking of Pam Tomlinson's experience with Rod Stewart calling and waving to her!--and Lauren Pizzo's great post not long ago about how gracious she found Rue McClanahan, upon their meeting. (A really nice post, if you haven't seen it yet.)

The most famous people I can think of right now whom I've met (and actually talked to--although only quite briefly) were Anna Quindlen and Tasha Tudor.
